NV Besserat de Bellefon Cuvée des Moines Brut Champagne

A somewhat unusual Brut cuvée, about 45 percent red Meunier, with a balance of Chardonnay and Pinot Noir. Its pearly bubbles pop in a flourish of white flowers and green peels that also offers an alluring brioche breadiness. The mousse is creamy-textured, toasty and fruity at once, like pastry wrapped around a confection of lime pith and juice. The finish is long, nutty, and savory, but it kicks out a parting shot of tropical citrus. Interesting, complicated, and invigorating, and it was also good—maybe even better—on Day Two.
