NV Sommariva Brut Valdobbiadene Prosecco Superiore

Sommariva’s Prosecco is made from Glera trained with the traditional sylvoz trellising at a density of three to four thousand vines per hectare. The fruit is hand-harvested and the must is vinified cold in stainless steel with inoculated yeast. The results deliver subtle pear and apple fruit notes, while a lightly reductive streak suggests minerals and water-on-stone. The acidity is on point and the sugar is balanced. Forthright, but it holds its own with snacks and light fish or poultry.
