NV Forget-Brimont Brut Champagne

An exceptional cuvée containing a high percentage of red grapes—40 percent Pinot Noir and 40 percent Meunier, with the balance of Chardonnay—grown in grand and premier cru vineyards. About forty percent of the blend is reserve wine from the prior five harvests, and it rests on lees for 30 months prior to disgorgement, all of which gives the wine structure, presence, and flesh.

Its quiet, passive, infinitely tiny bubbles spirit aromas mingling biscuit and brioche, red apple skin, Meyer lemon, yellow flowers, pink sunshine. Its lifted, fruity fragrance is fattened by nut and savoriness. Red fruits dominate the flavor profile: a sense of strawberries and red raspberries muddled with lime. But it’s toasty and leesy, too, beautifully rounded, balanced, and elegant.
