This is a dry, traditional method sparkling wine made from Muscat, a mix of orange and early clones. The fruit was direct pressed and fermented in stainless steel, and the wine spent 17 months en tirage prior to disgorgement. It’s bottled in clear glass and finished with a cork and wire hood.
Pale yellow, it has an active pour but afterward almost no discernible bead. It’s fragrant of apricot, apple blossom, and candied citrus peel, flowery but not too-sweet. The texture is prickly, scintillant, and the flavors suggest tart dried apricots spiked with lemon and fresh ginger. It’s got a savory, leesy note toward the finish, a light bitterness that calms the floral fruit.
