Sixty percent Syrah and forty percent Grenache grown biodynamically (and Demeter certified) in the tiny La Livinière appellation, a stunning small corner of the Languedoc that I visited in 2014. Vineyard soils are a mix of limestone and alluvial, and the vinification was in neutral oak and concrete. The wine was aged twelve months in 70 percent neutral French oak. It’s peppery but not stridently so, with big black cherry and black bramble fruit. The acidity is medium and tannins are supple, but mostly is spicy and peppery, a great foil for lamb, sausage, aïoli, ratatouille, vegetables.
