This wine comes from Troon’s estate Cowhorn Vineyard plus another organic vineyard in Applegate Valley. The grapes underwent carbonic maceration in a sealed stainless steel tank for two weeks, after which the must was pressed and fermented with ambient cultures. The wine spent five months in stainless steel and was bottled unfined and unfiltered with a modest sulfite addition.
It’s floral, spicy, violet-infused, smoky, and also a bit grape-y (from the carbonic maceration). The flavors are keynoted by spice and sharp blackberry fruits. It’s lightweight but has profound astringency at the mid-palate, plus a finishing whiff of pipe tobacco.
Pair it with barbecued meats.
