Prapian’s non-vintage Col de l’Utia Brut spumante is 100 percent Glera, organically grown. The fruit is hand-picked and fermented in stainless steel, and the wine is bottled with 8 to 12 g/L of residual sugar. Its bead is quiet, the mousse fizzing in flavors of sharp green apple dosed with lime juice. Touches of almond and orange blossom, Mandarin orange peel, and sourdough bread add depth. The finish is bracing, the wine vanishing in a blaze of yuzu citrus. A focused, concentrated, and complex Prosecco, well made and organic to boot.
