Eyrie’s Pinot gris is sourced in part from their Sisters Block Vineyard — named for the three shades of Pinot: noir, gris, and blanc — supplemented with purchased grapes from neighboring Tukwilla Vineyard. Fruit was hand picked, de-stemmed, pressed, and fermented in stainless steel tank.
The results are golden with a stony, almost flinty fragrance top-noted with orchard fruits, especially Asian pear, plus laurel and sage. Its texture is coating but the wine remains pliant and sprightly despite modest acidity.
It’s a terrific wine for milky fresh cheeses and mild preparations of white fish and shellfish, pasta with browned butter, and autumnal New England flavors.
