It’s crackly but not without substance, the apple-y aromas tinted with bread and biscuit. An active bead animates its pale yellow body, and while the mousse feels coarse the wine soon smooths into creaminess. The dosage is a modest 7 g/L, allowing the wine’s salinity to stand out.
Good with light-fleshed fish, shellfish, fresh and young cheeses, salads, and brunch. It’s a good value for a Chardonnay-based traditional method sparkler.
