Pisoni’s brut nature método classico sparkler is 100 percent Chardonnay that spends at least 28 months on lees. The wine is manually riddled and after disgorgement has only 0.5 g/L of residual sugar. (This 2018 bottle was disgorged in December 2021.) The result is pure, focused, and crystalline. The active, foamy pour soon quiets to a busy bead, and the texture is crisp and animated, with lemon-lime flavors that segue to a gingery finish. Overall it’s glittery and harmonious, the weight from lees aging balancing the bracing citric acidity.
