Troon’s Rhône-style white blend is 55 percent Roussanne, 25 percent Marsanne, and 20 Viognier, organically and biodynamically grown in their estate Cowhorn vineyard. It’s a faintly hazy gold color with aromas of russet apple, pear, quince, and something like autumn leaves. The flavors are likewise autumnal, with tawny fruits and a sense of apple, pear, and sweetgrass. The body is substantial and satiny, with a mouth-coating finish that reads like apricot nectar spiked with high-toned acidity. Pair it with lighter meats and vegetable dishes.
