Troon draws inspiration for their Vermentino from the wines of Corsica and Sardegna. The fruit is organically and biodynamically grown in their estate vineyard, and the wine is raised in used French oak barrels with lees contact. The result is a textural wine, coating and savory with flavors of fresh and dried pome fruits: quince, pear, russet apple. There’s a lift of bay laurel and an elegant grassy-saline streak down the midsection. The finish is forever.
It’s a good choice for the apéro hour; try it with aged goat’s milk cheese, salted almonds, sardines, and crostini. Also companionable with a range of fish and shellfish, light poultry, and white beans, especially those accented with flavors of ginger, fennel, or tarragon.
