Gilbert’s pét-nat has a base of Riesling, picked at 20.4° Brix, whole-cluster pressed, fermented, and bottled just shy of dry to earn its sparkle. The wine was disgorged and topped with a dosage of still Grüner Veltliner.
The wine is perfumed of pear and quince paste, but once on the palate its prickly acidity amplifies flavors of lemon lime, and green apple. Faintest leesy savoriness adds dimension, but this is a cleansing wine, a refresher with rich foods or seamless with the raw and vivid.
