NV Cantine Monfort Brut Trento DOC

One hundred percent Chardonnay grown in sandy clay soils in Trentino’s hills at 400 to 600 meters. The wine rested on lees for 24 months prior to disgorgement.

It’s crackly but not without substance, the apple-y aromas tinted with bread and biscuit. An active bead animates its pale yellow body, and while the mousse feels coarse the wine soon smooths into creaminess. The dosage is a modest 7 g/L, allowing the wine’s salinity to stand out.

Good with light-fleshed fish, shellfish, fresh and young cheeses, salads, and brunch. It’s a good value for a Chardonnay-based traditional method sparkler.
