Troon’s biodynamic white Druid’s Fluid is a blend of 65 percent Vermentino, 22 percent Marsanne, and 13 percent Roussanne. The Vermentino was foot trodden, while the other grapes were whole cluster pressed. The lots were fermented in neutral French oak and went through malolactic the following spring. All fermentations were with ambient cultures. After eight months in barrel, the wines were racked to tank for blending.
The result is shiny green-gold and highly aromatic, suggesting lime peel, grass, and lemon. The palate is textural, creamy, and softened by the malolactic, with flavors of lemongrass, green tea, and lemon-lime. This is a substantial wine with ample flavor and mouthfeel despite its lower alcohol. People who love Sauvignon blanc but eschew other grapes may wish to try it.
