Eyrie vinifies its five Pinot cuvées identically in an effort to showcase site. They use ambient yeast, small fermentation vessels, and aging in a very modest amount of new oak.
The Outcrop is dark and spicy, with a dusty sense of red earth and abundant notes of dried fruits and dried red flowers. The palate offers hibiscus, cranberry, and red cherry. The texture is scintillant. This is a shiny-bright wine, cleansing and forthright.
