2016 Feudi di San Gregorio Ros’Aura Rosato Campania IGT

A rosé of the southern Italian grape Aglianico from Irpinia, hand picked, de-stemmed, and treated to a 12-hour maceration. The wine aged for four months in stainless steel prior to release. The result is a medium salmon color with a peppery, flowery, saline aspect. The body has more tannic structure than expected, and overall the wine feels serious and quiet. Whereas much rosé is meant to partner with the fresh, raw, and youthful, this one works with savory fare, especially aged and washed-rind cheeses, rare meat, dark poultry. You need some fat.
