A Crémant made from equal parts Pinot Blanc and Auxerois with a tiny fraction of Chardonnay, aged 24 months. The mousse is creamy but the tiny bulles pop with lime-y acidity and notes of white flowers, lemon peel, and tart pear. Dry and crackly, the body finishes with slick of salty minerals. Refreshing as an aperitif, it also pairs well with young cheeses, seafood, and crispy snacks.
