A restrained and elegant Chardonnay whose subtle fragrance mingles lemon peel, wet stone, yellow apple skin, and white peaches, while the palate is lightly sprinkled with ginger and white pepper.
As the name “Wild Ferment” implies, the fruit cooked along with ambient yeast without must adjustments, and the wine was treated to 90 percent stainless with the remainder in neutral French oak, with only a small portion undergoing malolactic.
The result is mostly about orchard fruits, yellow peels, and fresh herbs—breezy, in other words, but with a stratum of minerals. An exceptional value.
