This Gewürz is an object lesson in such typicity, with its aromatic profile of spiced apple and baked pears, a pale scent of white petals and honeydew, and something like preserved lemons adding lift. The body is bone dry, shot with a lightning bolt of minerals and a nearly monumental stoniness grounding the finish. It’s not as unctuous or oily as its Alsatian counterpart, but it’s just as generous and savory. Pour it with a mixed cheese course.
