The result is not your grandmother’s Pinot Grigio. The robe is a warm yellow, lacking the watery greenish cast more common to the grape. The flavors are quiet, salty, and lightly herbal, with restrained fruit that reads like pear. The palate has the tiniest amount of dissolved gas, but it reads as lift, not fault. Overall it’s a savory, saline wine with crunchy minerals and nice refreshment. I’d like to try aging a few bottles.
