Grgich’s estate Fumé Blanc is lustrous and mouthwatering. It’s a varietal Sauvignon Blanc, about 80 percent Musqué clone, which contributes lilting, white-flowered aromatics to a fragrance splashed with green tea and lime peel. The attack is a blade of clean citrus, but the wine soon opens in silky pleats across the tongue, expanding and lengthening as it finishes.
Still, it’s somewhat bracing as an aperitif. Serve it with bright salads or citrusy, ginger-spiked vegetables, or let it play the role of a squeeze of lime with tempura, tacos, fish.
