The wine’s pallid yellow body is suffused with high-toned acid, like lemons and yellow apple skin soaked in white grapefruit juice. It lacks the musky Sauvignon profile, but its profound acidity gives it an exquisite angularity, while a rime of bitter pith around the edge adds bite. Although it’s mouth-watering it’s also somehow ample, the elements (fruit, bitter, sour) in harmony. Delicious.
