A varietal Garganega that’s a mouthful of nutty honeysuckle, dried yellow apple skin, and chamomile. The fruit was grown in basaltic lava in a vineyard laid across the east side of Monte Foscarino. But this is the Veneto, after all, so none of these “montes” are very tall; this one is merely 200 meters. The grapes macerated briefly before fermentation in neutral barrel, the latter softening the wine and adding complexity. It completed malolactic, too, a step that imbued it with creamy opulence. Ample, with far more detail and structure than most Soave, but it’s also sunny and smiling. It likes rich food.
