A somewhat uncommon wine—a Chassagne-Montrachet rouge (not blanc). It’s a deep garnet color with a fragrance of loamy cherries, green pepper, celery, grass, and sage. It tastes like fresh cherries steeped in all of the above, plus a slash of steel and licorice. The tannins are sharp, like biting a cherry stone, and the finish is drying and bitter. Pure, cooling, serene, earthy, interesting.
