The majority of Tablas Creek’s estate Grenache blanc goes into their white Rhône-style blends, but they also make about 1,000 cases into a varietal wine, fermented in a mix of stainless steel and wooden foudres.
The result is pale clear yellow with a quiet fragrant of pear, laurel, and salt. The wine has tart acidity — such a relief in this variety, which in warm climes can get flabby. The palate carries notes of green apple and barely ripe yellow stone fruit. Pair it with salads, fish, and young cheeses. Don’t serve it too cold.
