Centralas sources fruit for its rosé from a certified biodynamic vineyard. The wine is a fifty-fifty blend of Grenache and Syrah that ferments with ambient cultures, then is barrel-aged in 20 percent new American oak for ten months. The wine label has an ingredient disclosure: grapes, tartaric acid, sulfite.
It’s a peachy rose color and its aromas are tawny from the wood aging: beach rose, dried rose petals, rose hips, birch bark, autumn leaves. Its texture is weighty, with a creamy mid-palate and flavors of ripe red peach steeped in roses. The acidity is just enough, and the finish is, once again, autumnal and spiced.
