Collavini’s rosato is a blend of Pinot noir and Refosco dal Peduncolo Rosso, hand harvested, partially de-stemmed, treated to a short maceration, and fermented in stainless steel. It’s a pretty coppery color with an autumnal sense of peachy dried apricots, and the palate has a tawny quality with a rounded mouthfeel and a minty finish. It’s a good wine for a mixed cheese plate.
