This varietal Pinot bianco is hand-harvested and fermented with temperature control in large oak barrels. The wine ages for a year, also in barrel, and undergoes natural malolactic fermentation. Straw yellow with a faint greenish cast, it yields aromas of pear and birch wood plus a kick of white pepper. On the palate it’s sappy and succulent, with flavors of white peach, bay laurel, and spice. It’s a fitting wine for roasted poultry and aged cheeses.
