This cuvée comes from Troon’s estate Cownhorn Vineyard plus another organic vineyard in Applegate Valley. The grapes underwent carbonic maceration in a sealed stainless steel tank for two weeks, after which the must was pressed and fermented with ambient cultures. The wine spent five months in stainless steel and was bottled un-fined and unfiltered with a modest sulfite addition.
It’s floral, spicy, violet-infused, smoky, and also a bit grape-y (from the carbonic maceration). The flavors are keynoted by spice and sharp blackberry fruits. It’s lightweight but has profound astringency at the mid-palate, plus a finishing whiff of pipe tobacco.
Pair it with barbecued meats.
