Bertrand’s estate vineyards in the Sud de France are farmed biodynamically. In this cuvée, fruit from sites near Perpignan was hand-picked, sorted, and de-stemmed prior to maceration. One third of the wine aged in barrel and the rest in vats for 9 months. The results are deep ruby reds with aromas of cassis, brambly fruits, and black cherry with a lift of brushy herbs. Solid acidity highlights the wine’s youthful tannins and carries flavors of ripe and savory black fruit savoriness. It’s well stitched together but young and would enjoy a few years of bottle age. Pair it now with roasted pork loin or smoked pork shoulder, lamb, rare beef, or dishes featuring earthy mushrooms or aged cheeses.
