This vintage-dated, traditional method sparkler is 100 percent Chardonnay grown, in the Gruet tradition, somewhere in America but made in New Mexico. The wine spent 48 months en tirage prior to disgorgment and, as the “Sauvage” moniker indicates, there was no dosage.
The mousse is active, the body toasty and bready, with a soy sauce pop from the long lees contact. Suggestions of almond and marzipan mingle with apricot and lemon zest, and the foamy texture soon subsides into spritely cleansing bubbles. The savoriness blooms again at the finish.
It’s a wine with richness and abundance: fruit and biscuit, bread and umami. Pair it with poultry, rich shellfish, medium aged cheeses, charcuterie.
