An elegant, lively, lip-smacking Cava with no sugar in the way of the ripe, indigenous (and organically grown) Xarel•lo, Macabeu, and Parellada fruit. The body is active at first but quickly froths to a lightly spirited effervescence. The fragrance is fresh despite two years on lees, and the attack is lemony-crisp, with crackly fizz at the front of the palate and a twist of citrus at the finish. There are flowers and other fruits, but they’re restrained, and the whole feels seamless, the fruit and toasty aging notes in harmony. Great refreshment for a wide range of fare.
