2016 Vinum Cellars Rosé Paso Robles

A blend of Grenache, Syrah, and Mourvèdre, grown at the Seashell Vineyard in Paso’s Geneseo district. It’s substantial and unblushing: spicy, fruity, and quite heavily structured. The aromas are of strawberries, cracked pepper, and resinous herbs, while the body has a earthy quality and a finish like sweet tomatoes seasoned with chive and thyme. The acidity is solid but not profound.

This wine would be especially companionable with piquant foods like Boursin or herbed chèvre, aïoli, spice-roasted salmon or poultry, rare pork loin with a pepper crust.
