Collavini ferments and ages their Friulano in stainless steel for a fresh, modern style. It’s light gold color with a heady fragrance of peaches, apricots, candied lemon peel, and a touch of laurel. The body has substantial fruit but also a curious green tea quality, lightly grassy, mixing with a sense of jasmine, stone fruit, and citrus. The finish is saline with some tarragon-like herbs. It’s a nice aperitif wine and would be great with shellfish — I’m thinking scallops or shrimp.
