This enchanting wine is a blend of 48 percent Syrah, 22 percent Mourvèdre, 20 percent Grenache, and 10 percent Carignan grown in the brushy garrigue of the Terrasses du Larzac. The setting is suggestive; the wine offers the scent of dried herbs, juniper berries, and mountain air. Firm acidity strikes the mid-palate and black-tea tannins lean forward toward the finish. The fruit skews to black plum skin and blackberries.
This is a deeply structured wine, much more about texture and savoriness than fruit. It’s perfect for roasts and slow-smoked meats, cured meats, mushrooms, or a mixed charcuterie board studded with cured black olives, aged cheeses, and salumi.
