Huber’s varietal Grüner is sourced from a mix of organically farmed vineyards. The must is in contact with the skins for two hours, to add texture, before being vinified cool in stainless steel. The wine enjoys some lees stirring during aging. The resultant body is pale yellow with aromas of spearmint, wet stone, and lime peel. It has substantial heft on the palate and delivers flavors of white peach dosed with a squeeze of lime. It has a long, mineral-saline finish. It’s a great wine for fresh and raw vegetables: asparagus, spinach, even artichokes.
