Although known for its sparkling wine, Domaine Carneros also produces a still Pinot noir from the five estate vineyards that surround the winery. The clusters were de-stemmed and cold soaked for five days, then fermentation preceded in open-topped vats before pressing off into French oak barrels for ten months of élevage. It’s saturated red, amiable and fruit-driven, perfumed with sweet spiced berries. This sense carries through to the palate, which adds layers of red plums. The texture is likewise friendly: juicy but with a slight astringency that gives it bite. The oak is not too-too. Try it with a mix of charcuterie and cheeses.
