Still, it’s a big wine, ample and friendly but elevated by piquant acidity. The flavors skew toward quince and yellow pome fruits, with suggestions of tropical passion fruit and papaya. A streak of stony salt divides the mid-section.
It’s a good aperitif to serve with crispy snacks and a wide array of young and medium-aged cheeses. It’s also terrific with lighter meats, poultry, and fish. Vegetarians should try it with fruit- and nut-studded pilafs, or curries keynoted by cardamom, turmeric, and ginger.
