Planeta’s Etna Bianco is made from 100 percent native Carricante grown in their Monteleguardia vineyard. Fruit was hand-picked, de-stemmed and pressed, then inoculated and fermented cool in the company’s Feudo di Mezzo winery. Ten percent of the must fermented in oak barriques.
The robe is a light sunrise yellow with a fragrance of hay, straw, grass, green melon, and quince. The body is round and ample, suggesting honeydew and yellow peaches, while a slight grassiness adds dimension. The finish is languorous.
Pair it with young and medium-aged cheeses or poultry and fish. Also try with hearty salads, especially with savory elements like nuts, bacon, or cheese. A natural with spaghetti alle vongole.
