This Chardonnay’s lovely fragrance mingles cream, lemon curd, apple flesh, quince paste, and ginger. The body is not fruity, not creamy or custardy or encumbered by oak. Instead there is a sense of apple peel and brine, white flowers and herbs, chamomile, laurel, nutmeg, and almost green olive. The texture is light (the acidity medium) and the finish feels herbal-saline, a little bitter and shot with white pepper.
It’s serious but sensitive. Let it warm to almost room temperature to enjoy its charms, and pair it with herbed chèvre, crispy chicken, pasta in cream sauce, white fish, shellfish, tempura.
