A luminous blend of Pinot Bianco, Tocai Friulano, and Ribolla Gialla grown in limestone and clay. It’s redolent of pear, pastry, quinces, and yellow apple, and its body crackles with herbaceous laurel and brine. Still, it has a big, coating texture, decadent like paperwhites. This made it a remarkably congenial match for Stilton (a tall order), whose salty funk was parried by the wine’s punch of pome fruits and stone.
