Tornatore’s Etna Rosso is 95 percent Nerello Mascalese with the balance Nerello Cappuccio, fermented in concrete and aged in large wooden casks. It’s a limpid brickish red with a clear rim; it looks somewhat older than its years. The wine is lightly volatile (in that Italian way), with a characterful hint of barnyard funk that mingles with savory and earthy aromas. The palate is juicy, red-fruited and somewhat tawny, with vanishing tannins. It’s a refreshing accompaniment for tender red sauces.
