Cultured Yeast

Yeast strains generated in a laboratory, used for primary fermentation. These are customized to produce certain effects, for example to emphasize particular aromatics or to ensure a wine will ferment to dryness. It may be referred to as designer yeast or inoculated yeast.

Many natural winemakers eschew cultured yeast additions, preferring to rely on the cultures already present on the grapes and ambient in the winery.
