2021 Castel Salle Schiava Bischofsleiten Sudtirol Alto Adige

Fruit for this Schiava bottling was hand harvested and fermented in temperature controlled stainless steel. The wine spent six months in a mix of steel tank and used tonneaux before bottling in lightweight, recycled glass (can I get an Amen?).

The body is limpid strawberry red with a clear rim. Its aromas are powdery sweet, and the flavors skew toward ripe cherries and strawberries. The modest tannins read like apple skin, and its light textured with modest acidity, too. This is a forthright wine good for simple snacks, light fish preparations, or a cheese course.
