This Collio is a varietal Cabernet Franc, grown in limestone and clay about 20 km from the Adriatic. The fruit was hand-picked and the wine aged in oak cask for twelve months.
It’s peppery—black peppery, not Cab Franc’s characteristic green. Its robe is deeply rubescent and the scent smacks of crushed anise seed and the oily bouquet of rubbed resinous herbs. Its frame is juicy, not overtly tannic, while a black olive savoriness complements its bramble fruit. The finish is clean and watery.
Superlative with pasta puttanesca, a match for the salinity of the olives and piquancy of the garlic, the tart red tomatoes, a sprinkling of savory cheese.
